This salad’s versatility makes it one of my favorite go-to salads. Invited to a BBQ? Going on a picnic & need a side that can withstand the heat? Need a quick side for dinner? Maybe you just need to use up some of those extra veggies from this summer’s garden haul. The answer to all of these dilemmas…Super Simple Summer Salad!
The hardest part about this salad is saying, “Super simple summer salad”. It’s so simple in fact that I’m convinced that it’ll become your go-to salad too.
Ingredients:
2 cucumbers peeled & sliced
2 cups cherry tomatoes sliced in half
1 red bell pepper cored & sliced into wedges
1 green bell pepper cored & sliced into wedges
½ red onion sliced
1-2 cups Italian or ranch salad dressing
Salt & pepper to taste
Directions:
As you prep all your veggies just throw them & all the seasonings into a bowl with a lid, once you’re done, tightly close the lid, & shake-shake-shake (your boo-ooty!) until everything is thoroughly mixed. That’s it!
I like to refrigerate mine for at least 30 minutes before serving, but it’s not necessary. You can make it ahead for a quick grab-n-go snack giving it even more versatility.
